After hours and hours of prep time and cooking, a subpar turkey dinner can be a real bummer for everyone at the table, especially the cook.

So this year, my friend Chef Lance and I have set out on a mission to rid the world of dry bird disasters.

We're calling it Operation Juicy Bird.

Our objective: To show YOU how to make the juiciest, most flavorful turkey to ever grace your Thanksgiving table.

One that will draw raves from your friends and family.

To carry out our mission, the chef and I filmed a step-by-step video for you below.

And that's not it...

We also had Carrie the Graphic Designer put together an instructional Underground Holiday Recipe Guide with ingredients and instructions for your Juicy Bird as well as delicious side dishes, including yams, Paleo Bread stuffing, and Brussels sprouts with bacon.

This is great.

I know a few people who are HIGHLY sensitive to gluten.

I mean, even the most minute exposure to the stuff -- aka "getting glutened" -- will have them bedridden and/or on the toilet for the next few days.

No bueno.

So for these folks, it is of utmost importance that they remain exceedingly vigilant while dining out.

But remember, sensitivity to gluten can be a silent killer, slowly eroding your intestinal lining, blood-brain barrier, and other tissues before the overt signs and symptoms kick in.

In other words, you don't have to have extreme reactions to gluten to keep a watchful eye on it.

The good news is that many restaurants these days are offering gluten-free menus, and servers aren't as clueless about gluten sensitivity as they used to be.

With so many hidden sources of gluten, how can you MAKE SURE that there's none on your plate?

But here's the thing -- cholesterol is VITAL for life. If we didn't have cholesterol, we'd be dead.

And the war against cholesterol needs to end now.

Dr. David Perlmutter, author of Grain Brain, was recently a guest on UW Radio and discussed the role of cholesterol for many essential life functions.

Did you know that 25% of the cholesterol in your body is found in the brain, where it is an antioxidant, helps build neuronal membranes, and is the precursor that allows your brain to make vitamin D? (Estrogen, progesterone, testosterone, and cortisol, too.)

A tablespoon of pure white sugar.

A Snickers bar.

A banana.

And a slice of whole wheat bread.

If I were to ask you which of the edible items above causes the greatest surge in blood sugar, which would you choose?

My guess is that most people would pick the Snickers bar. It's a candy bar, and candy bars will give you diabetes, right?

Very true, but...

The answer is actually the one you likely least expected -- the slice of whole wheat bread.

I kid you not. If you take a look at the glycemic index (GI) -- which measures how quickly blood sugar rises after eating particular foods -- you'll find that whole wheat bread has a GI of 71.

Sugar - 68. Snickers - 55. A banana - 54.

Whole wheat wins!

Or loses...

Let's think about this for a minute. I remember when the low-fat craze was at its peak in the mid-1980s. Fearing the supposed deadly consequences of red meat and saturated fat, the populace turned to mass consumption of "heart healthy" whole grains, or the base of the government-prescribed food pyramid.

Since this unprecedented shift in eating habits, the rates of diabetes and heart disease have soared.

Coincidence?

Not a chance. The TRUTH is that the move to a whole grain-based diet only served to spike our collective blood sugars, leading to obesity, diabetes, and heart disease.

Yes, heart disease.

I remember it like it was yesterday.

Those silly antacid commercials with the man rubbing his chest after a meal, only to be saved by an artificially fruit-flavored chewable that made me wish I had heartburn.

Or the Major League pitcher asking how do you spell relief...

Why these commercials came on during my after-school cartoons will always be a mystery.

It's as if I was being brainwashed from an early age to believe that stomach acid was the root of all things evil.

Come to think of it, Tums and Rolaids were like gateway soft chews to us kids who would later opt for the harder over-the-counter and prescription drugs to combat acid overflow.

Then again, stomach acid decreases with age. So if excess acid is really the cause of GERD and heartburn, targeting eight year olds might be a good idea.

Think about that for a second.

You see, the TRUTH is that ninety-percent of the time heartburn is not a matter of excessive stomach acid but rather too little.

And when we start messing around with our stomach acid by taking acid-blocking drugs, we leave ourselves wide open for a long list of dysfunctions and health challenges.

For example, did you know that the acidity of the food passing from your stomach to your intestines is what triggers your gallbladder to release bile for fat digestion and is also the signal for your pancreas to release digestive enzymes that further break down proteins, carbohydrates, and fats?

Shut down your stomach acid production and your entire digestive process gets screwed up. In other words, it's literally impossible to break down and absorb the foods and nutrients you eat.

One more. Did you know that low stomach acid has been connected with depression, anxiety, insomnia, brain fog, food sensitivities, autoimmunity, anemia, osteoporosis, fatty acid deficiency, and problems building muscle?

In this week's video I break it all down to you and show you how stomach acid is not the enemy. It's your friend.

Gluten is the combination of gliadin and glutenin. If you are experiencing symptoms that you believe are associated with gluten consumption, and go to the doctor for a blood test, the doctor will look for gliadin, endomysium, and transglutaminase. One thing the doctor does not tell you is that there are different types of gliadin: alpha, beta, omega and gamma, and the test only looks for alpha gliadin.

Glutenin is the other half of gluten. People can be equally as reactive to glutenin as they are to gliadin, but they are not being tested for it. Wheat germ agglutinin (WGA) is a lectin, which binds on to carbohydrates. They are found in high concentrations in whole wheat and sprouted wheat. When you eat WGA, it can cause your red blood cells clump together and it can pass through the blood-brain barrier, attach to your myelin sheath, and reduce nerve growth factor.

Deamidated gliadin is the result of the food industry processing gluten to make it water soluble. Your T-cells are very reactive to deamidated gliadin. When you digest gliadin, you make gluteomorphin. The consumption of gluten may trigger antibodies to gluteomorphin and/or prodynorphin which can cause neurological issues. Lastly, you want to look for antibodies to transglutaminase.
